What can you say about a knife like this?Among the greatest knives you can buy. Weight, balance and handling are like Rolls Royce. Sharpness is surgical level and the quality of the steel holds an edge for a very long time. Great attention is given to every detail.In my opinion, Miyabi is among the best money can buy. It could not only be used in a home kitchen, but also by a world renowned chef. No task is too big. Not only is it a dependable tool, but also a work of art!

I collect upper end knives as a hobby. My son is into cooking and I bought him the Miyabi Chef's knife a couple of years back-- he loves it. So, I recently picked up this Miyabi Slicing knife for him (AKA Sushi knife). He is exceeding happy with this one as well. The quality, attention to detail, fit and finish are just amazing for this price point. Oh, and his Chef's knife has only required stropped to date! Really holds an edge.

I have a fair amount of Japanese knives that I use everyday now for over 4 years. This slicer came in a beautiful box and was sharp out of the box. I have sharpened it multiple times over the years and it easily takes an edge, without becoming curved. Fits well in the hand, but is very light, a bit too light for me. Really does well with large cuts of meat, sub primals into steaks for example. Even though it’s double beveled, it still slices fish very cleanly. Very nice knife.

The sharpest thing I have ever used. I thought I knew what sharp was until I got this. Beautiful craftsmanship. I parted out a chicken as the first test. I was blown away with its sharpness. Just touch the edge to meat and it cut instantly. I'm gonna get the whole line now even if I have to start selling organs.

Im a sushi chef and I just bought tojiro chef knife and miyabi slicer knife both are pretty goods beautiful and cool so I took them to my work today tojiro is just good but miyabi is like wowwww ! Its so sharp and has very nice balance in my hand much better than my old global yanagiba definitely recommend this one
